3/4 lb. butter
2 c. sugar
1 tbsp. grated orange peel
2 tsp. vanilla
1 large egg
3 1/4 c. brown sugar
1 tsp. baking powder
1/4 tsp. salt
1 1/2 c. dried cranberry
1 1/2 c. sweetened flaked dried coconut

Directions:
Directions:
In a large bowl, with a mixer on medium speed, beat butter, sugar, orange peel, and vanilla until smooth. Beat in egg until well blended.

In bowl, mix flour, baking powder, and salt. Add to butter mixture and stir. Then beat on low speed until dough comes together, about 5 minutes. Mix in cranberry and coconuts.

Shape dough into 1 inch balls and place about 2 inches apart on buttered baking sheets.

Bake in oven at 350º until cookie edges just begin to brown, about 11-15 min. Let cookies cool on sheet for 5 min.
