2 Cups diced pared carrots,
3/4 Cup butter or margarine,
1 cup sugar,
1 Egg,
1 tsp vanilla,
2 cups flour,
2 tsp Baking powder,
1/2 tsp salt.

Directions:
Directions:
Cook carrots until tender; drain and mash, cool.
Cream together butter and sugar, add egg and vanilla beat until fluffy. Stir in carrots. Mix all dry ingredients, blend into creamed mixture. Drop by teaspoonfuls on an ungreased cookie sheet. Bake at 375º about 12 minutes.
