3 med. firm red tomatoes
2 beaten eggs
1 T. water
1/2 stick butter or margarine
salt and pepper
1 c. crushed cracker crumbs or 2/3 c.cornmeal

Directions:
Directions:
Slice tomatoes (about 1/4" thick). Beat eggs and water together. Melt butter in a skillet or frying pan. Dip the tomato slices in the egg mixture and coat with cracker crumbs. Season with salt and pepper as desired. Fry in butter until golden brown, turn over and continue frying. (Note: if using salted crackers for your coating, you may want to omit the salt for seasoning).
