1 package of pre-made pie crusts
dried minced onion
1 lb of frozen mixed vegetables
salt & pepper to taste
4 T of water to steam the veggies
1 can of cream of chicken soup
boiled chicken or store bought rotisserie chicken

Directions:
Directions:
Choose diced vegetables for even cooking - Peas, carrots, & potatoes make good additions.

Bake one pie crust according to instructions. Shred the chicken with a fork & remove the skin & the bones. Set aside.

Pour veggies, water, salt & pepper, & dried minced onions in microwavable bowl. Put in microwave until tender. Combine chicken, veggies, & soup - Pour into pie crust. Place top crust on & cook at 420º for 15 min., then 375º for 25 min.
