2 large chopped onions
1/2 cup butter (melted)
1/2 cup flour
1/4 cup parsley
1 lb crabmeat
4 oz grated American cheese
1 cup chopped celery (heart and leaves)
1/2 cup chopped green onions
1 (13 oz) can evaporated milk
2 egg yokes, slightly beaten
4 oz of canned mushrooms, drained)
Salt and red pepper to taste

Directions:
Preheat oven to 375º. Sauté onions and celery in butter over low heat. Blend flour, stirring well. Gradually add milk and seasonings, stirring constantly. Cook on low heat until thickened. Remove from heat; gradually adding beaten egg yolks, stirring constantly. Cook until thickened. Remove from heat, gradually fold in crabmeat, mushrooms, green onions and parsley. Pour into a greased 13 x 9 casserole, top with grated cheese. Bake for 20 minutes.
