2 large chopped onions
1/2 cup butter (melted)
1/2 cup flour
1/4 cup parsley
1 lb crabmeat
4 oz grated American cheese
1 cup chopped celery (heart and leaves)
1/2 cup chopped green onions
1 (13 oz) can evaporated milk
2 egg yokes, slightly beaten
4 oz of canned mushrooms, drained)
Salt and red pepper to taste

Preheat oven to 375║. SautÚ onions and celery in butter over low heat. Blend flour, stirring well. Gradually add milk and seasonings, stirring constantly. Cook on low heat until thickened. Remove from heat; gradually adding beaten egg yolks, stirring constantly. Cook until thickened. Remove from heat, gradually fold in crabmeat, mushrooms, green onions and parsley. Pour into a greased 13 x 9 casserole, top with grated cheese. Bake for 20 minutes.
