1 medium sized pumpkin
2 lbs ground beef
1 (4oz) can sliced mushrooms or fresh sliced mushrooms
1 (8 oz) can sliced water chestnuts
1 onion chopped
2 Tbs soy sauce
1 can cream of chicken soup
2 Tbs brown sugar
1 1/2 cups cooked rice

Cut off top of pumpkin and clean out thoroughly. Preheat oven to 350º. Cook hamburger until brown along with onion. Drain. Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes stirring occasionally. Add the cooked rice and drained water chestnuts. Spoon mixture into the pumpkin shell. Replace the pumpkin top. Place on a foil lined baking sheet. Bake 1 hour or until the inside meat of the pumpkin is tender. (Usually takes longer than an hour) Put pumpkin on a plate and scoop out the casserole with pumpkin to serve.

My family always enjoyed this for our Halloween meal. We would add things like grape jello spiders, grape jello set in circle (jiggler recipe on jello box) add pretzel stick legs.
