1/2 c cabbage (finely sliced)

1/2 Mexican squash (coyote)

1/2 corn

1/4 c carrots

1/4 green onions

1/2 jalapeño chile

1 can of fried beans

Monterey Jack Cheese

strands of onion

1. Finely chop vegetables

2. Pour 1/3 enchilada in the pan.

2. Soften tortillas by heating them on the comal then running through the water quickly.

3. Add beans, vegetables and cheese to the tortilla, roll them and place them on the pan. Cover with 1/3 can enchilada then place cotija and pieces of onion on top. Continue doing the same another time so there are 2 levels of tortillas.

4. Cover pan and cook for about 20 minutes to heat up.
