3 c. water
2 carrots - shredded
1 egg
1/2 tsp. vanilla
2 T. honey
2 bananas - ripe, mashed
4 c. flour - whole wheat
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
Directions:
Directions:
1. Preheat oven to 350º.
2. In large mixing bowl, blend water, carrots, egg, vanilla and honey. Add mashed bananas.
3. In separate bowl, mix dry ingredients.
4. Pour flour mixture into carrot mixture and mix well.
5. Spray a 12 cup cupcake pan with non-stick spray.
6. Fill each cup 3/4 full.
7. Bake for 50 to 60 minutes.
8. Cool before serving.

You can "ice" the cupcakes with peanut butter when cool.
