Ingredients: Chicken, (whole or any part you have) Squirrel (whole - including the head) Rabbit (whole - including the head) Salt and Pepper to taste Iron Skillet (frying pan) Water Wesson Oil

Directions:Cut up the chicken or rabbit or squirrel - salt and pepper to taste. Put in frying pan with a bit of water and a bit of Wesson Oil. Cook - stir occasionally Check and make sure not sticking - cook for hours Makes its own gravy Hint:(you may flour rabbit or chicken or squirrel and fry first and then pour excess oil off and then put water in and then turn heat down and simmer) |

Notes: My mother used to have to cook whatever Daddy brought home; to make it tender Mama would put it in the frying pan with a bit of water and leave it on the oil or wood stove and let it cook slowly - she later did it on her pride and joy - her gas stove - I guess she learned it from her Mama - both my Grandmothers had 12 children - so what came home was cooked and eaten and you were glad for it - my Grandmothers and later my Aunts and my Mother learned to make do with what they had and learned to make it good to eat - I can remember eating good and not knowing we were poor - guess that says a lot for the women that struggled before us
