8 potatoes, peeled, cooked, and mashed
8 oz. cream cheese, softened
8 oz. sour cream
1/2 c. (1 stick) butter, softened
1/2 c. (2 oz.) shredded cheddar cheese
1-1/2 T. minced onion
dash of salt and pepper
bacon bits

Directions:
Directions:
Combine the potatoes, cream cheese, sour cream, butter, 1/2 c. cheddar cheese, onion, salt and pepper in a bowl. Spoon in a 2 qt. baking dish. Bake at 350º for 35-40 minutes. Sprinkle with the bacon bits and additional cheddar cheese. Bake for an additional 5 minutes.
