6 oz. turkey kielbasa, cut into 1/2-inch slices
2 red bell peppers, seeded and chopped
1 onion, chopped
4 garlic cloves, chopped
1 (8-oz.) bottle clam juice or 1 c. reduced-sodium chicken broth
1/2 tsp. saffron threads, crushed
3/4 c. long-grain white rice
1 lb. large shrimp, peeled and veined
1 (15-oz.) can artichoke hearts, drained and quartered
1/2 c. frozen peas

Directions:

Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the kielbasa and cook, turning frequently, until lightly browned, about 6 minuets. Add the bell peppers, onion, and garlic; cook, stirring often, until softened, about 5 minutes. Stir in the clam juice and saffron. Bring to a boil and stir in the rice. Reduce the heat and simmer, covered, 15 minutes. Add the shrimp, artichoke hearts,and peas; cook, covered, until the shrimp are just opaque, about 10 minutes longer.
