8 Roma tomatoes
1 medium red onion
1 small jar capers
2 jalapenos (minced)
5 cloves garlic (minced)
1 bunch fresh Basil
Salt and pepper to taste
2 T olive oil or enough to lightly coat everything
1 T Red wine vinegar

Directions:
Directions:
Cut the Roma's in half and discard the seeds then dice them into pieces as small as you can. Dice the onion as small as you can. Next finely chop the Basil and in a medium bowl add the tomatoes, onion, garlic, capers, salt and pepper, jalapenos and basil with the olive oil and vinegar and mix until everything is coated. Chill for about an hour and serve with a bag of scoops or equivalent.
