1 1/2 lb. ground beef
1 egg
1/4 c. finely chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. ry bread crumbs
2 (8 oz) cans tomato sauce with mushrooms
1/4 c. chopped celery
1/4 c. chopped green pepper
2 c. cooked rice
1/4 tsp. poultry seasoning
1/2 tsp. salt
1/8 tsp. pepper

Mix beef, egg, onion, 1/2 tsp. salt, 1/4 tsp. pepper, crumbs and 1/2 can tomato sauce. Pat out on sheet of foil to 9 x 10 rectangle. For filling: combine celery, green pepper, rice, poultry seasoning 1/2 tsp. salt and 1/8 tsp. pepper. Spread over beef. Roll as for jelly roll: place on foil, seam side down. Place in shallow baking dish. Bake at 350 degrees for 40 minutes. Pour off fat; pour remaining tomato sauce over loaf. Bake 30 minutes longer.
