3 lb. round steak
1 Tbsp. salt
1/2 tsp. pepper
2 onions, sliced
1 carrot, sliced
1 stalk celery, chopped
4 cloves
4 peppercorns
1/2 c. red wine vinegar
2 bay leaves
3 1/2 c. water
2 Tbsp. fat
4 Tbsp. butter
3 Tbsp. flour
1 Tbsp. sugar
5 gingersnaps, crushed

Directions:
Directions:
Sprinkle steak with salt and pepper. Place in glass bowl. Add vegetables, cloves, peppercorns, vinegar, bay leaves and water. Cover; refrigerate 4 days, turning occassionally. Remove steak from marinade; dry with paper towels. Strain and reserve marinade. Heat fat and 1 Tbsp. butter in heavy casserole. Add steak; sear over high heat until browned. Add marinade; bring to a boil. Cover; cook over low heat for 3 hours. Melt remaining butter in small skillet; stir in flour and sugar until smooth. Cook, stirring, until brown. Stir carefully into simmering marinade' Cover; simmer for 1 hour longer. Remove steak; add gingersnap crumbs to marinae. Cook; stirring until smooth and thickened. Serve with steak.
