2 TB olive oil
2 14oz cans of cannellini beans, lightly washed and drained of juice
1 garlic clove, minced
1/2 tsp chili flakes
1 small red onion, diced (1/2 squares)
1 punnet cherry tomatoes (optional)
8-9 (by preference, can be less) slices of raw bacon
1 TB fresh oregano leaves (optional)

Preheat oven to 400º F.

Place beans in a casserole dish. Add garlic, chili flakes, onion and tomatoes. Pour olive oil over. Fry the bacon then allow it to sit over a paper towel and drain. Cut into 1 inch pieces. Add to bean mixture and lightly toss until combined.

Place, uncovered into oven. Stir every 5 or 6 minutes until onions are cooked and beans are splitting open. About 20-25 minutes.

Toss in oregano and serve immediately.
