3 lb. boneless beef brisket
1 1/2 tsp. salt
1/4 tsp. coarse ground pepper
3 med. onions, cut in halves
1 bay leaf
6 carrots, cut in halves
6 small potatoes
1/2 c. flour
1 1/2 c. milk
1/4 c. prepared horseradish

Directions:
Sear brisket in hot fat until brown on both sides. Place in dutch oven and season with 1/2 tsp. salt and the pepper. Add 1 c. water, onions, and bay leaf; cover. Simmer 2 1/2 hours. Add carrots and potatoes. Simmer another 45 minutes or until brisket is tender. Remoe meat and vegetables to servig platter. Use 1 1/2 cups juice for gravy. Mix flour and remaining salt to juice gradually until smooth. Stir in milk and horseradish. Cook over low heat, stirring constantly until thickened. Serve over brisket and vegetables.
