1 Whole Chicken
2-3 Tbs of lemon juice
2 Tbs red or white wine
2 Tbs extra virgin olive oil
1 Tbs thyme (fresh or dried)
1 Tbs rosemary (fresh)

Directions:
1. Preheat oven to 400º
2. Wash, clean and pat dry chicken
3. Rub chicken down with olive oil
3. Rub in salt, pepper, thyme
4. Rub lemon juice and rosemary inside cavity add fresh rosemary
5. Put the fresh herbs under the skin. It's very important to get it under the skin.
6. Pour wine over chicken
7. Bake in oven for about 65 minutes (add about 8-10 minutes per pound).
8. You’ll know it’s done when you can wiggle the leg easily and juices come out clear.
