Buy beef liver at least a1/4 of an inch thick
Add salt and pepper
Dredge in flour, remove excess
Fry some bacon, remove from skillet and place in oven to keep warm

Directions:
Directions:
Fry/brown liver in bacon fat (works the best), just to get the liver soft
Add one to two medium onions sliced thin
Braise the onions until tender
Cover and simmer liver and onions until tender (a few minutes)
Serve with mashed potatoes, previously fried bacon on the side
(Mom said, “You can’t forget the bacon , if you want the kids to eat it.”)
