> > ¼ of a potato
> > ½ cup of milk
> > 1 tsp ground cinnamon
> > Pinch of powdered sugar
> > Maple syrup

Directions:
Directions:
First, you want to prepare everything to get it ready to cook. Peel one potato an shred or cut it into
pieces. Next beat 2 eggs in a bowl, mix the milk an cinnamon in with the eggs till its all mixed properly. Cook your bacon or sausage in a skillet at medium high temperature for approximately 7 minutes or until well done. Cook your shredded or cut potato at medium high temp for approximate 5 minutes each side or until golden brown.Take your third egg an cook it at medium temp about on minute each side or until cooked to desired state (I usually break the yoke and cook it so that its not runny when eating the sandwich). Next take your 2 pieces of Texas toast and dip both sides of the bread in your egg milk and cinnamon. Mix(the mix makes enough for 6 pieces), and place on skillet at medium high temp and cook for a minute and a half both sides, or until brown and a little crispy. Now place one piece of toast down and stack the rest on and get ready to enjoy your sandwich. You could eat it just as is or sprinkle a little powdered sugar on top and some maple syrup and eat with a fork.

This sandwich is extremely versatile, add whatever you like for breakfast, or take away the things you don't like. Use sausage in stead of bacon, or go ahead and use both. mmmm mmmm delicious!
