Pancakes: 1 1/2 cups all purpose flour, 3 Tbs sugar, 1 3/4 tbs baking powder, 1tsp salt. 1 1/2 cups milk, 3 tbs melted butter, 2 eggs, 1/2 tsp. vanilla. (use 1/4 cup batter each pancake)
Filling: 6 eggs, 1 package sausage links, 1 green bell pepper, 3 small peeled red potatoes, 1/2 yellow onion, 1 cup grated cheddar cheese, 1 cup grated mozzarella cheese, salt and pepper to taste.

make pancake batter and set aside. In medium sized frying pan cut up sausage and cook until brown chop up onion, bell peppers and potatoes and add to sausage. cook until potatoes are soft. Add eggs and mic together until cooked. add salt and pepper to taste.
Cook pancakes. Pancakes should be thin enough to roll, about 6 inches in diameter.
spoon mixture onto pancake, sprinkle cheese on top and roll like a crepe or burrito. Eat like a burrito or add syrup and sprinkle with powdered sugar. ENJOY !
