4 jumbo Sweet Vidalia onions
1 stick margarine
5 oz. evaporated milk
3 medium eggs
1 stack Ritz crackers
1 1/2 c. shredded Longhorn/Colby cheese
Salt and pepper to taste
3 T. margarine

Directions:
Directions:
Peel and wash onions. Cut into chunks. Boil until tender. Drain off water. Melt stick of butter in onions and saute for 3 minutes. Set aside. Mix milk and eggs and beat well. Pour this mixture over onions. Add 1 cup of grated cheese and 25 crumbled Ritz crackers to onion mixture. Salt and pepper to taste and mix well. Bake in large casserole dish at 375º for 35 minutes. Sprinkle remaining 1/2 cup cheese on top of casserole. Crumble the remaining stack of crackers on top of the cheese. Dot the 3 tablespoons of margarine over crackers and return to oven long enough to melt butter and cheese.
