3 - slightly beaten eggs
2 cups milk
1-1/2 cups cooked rice
1/2 c. sugar
1 t. vanilla
1/2 t. salt

Directions:
Directions:
In bowl, combine eggs, milk, rice, sugar and salt; mix well. Bake in a 10x6x2 baking dish at 325º for 25 minutes. Stir. Sprinkle with cinnamon. Continue baking till knife inserted halfway between center and edge comes out clean, about 20-25 minutes. Serve warm or chilled.
