Ingredients: 3 lbs ground beef, 1lb italian sausage, 2lg white onions, 2 lg. greeen peppers, 1(28oz.) can stewed tomatoes, 1(15oz) can tomato sauce, 1 lg, clove garlic, 1(16oz.) jar hot picante sauce, 2(4oz.) pkgs. Shelby's Texas chili mix(use only one pkg. of corn masa flour packet), 1sm. pkg. of taco seasoning mix, 2Tbs. gumbo file(cajun spice), garlic powder to taste, Lawry's seasoning salt to taste, black pepper, chili powder, cayenne red peppers to taste, 4 lg. dark green chili peppers, 1 (40z) can diced jalapeno peppers, 1( 16oz) pkg. of kidney beans.

Directions:Meat: scramble ground beef, brown lightly. Aff Shelby red chili mix, teaspoon of carlic powder, teaspoon black pepper. In a seperate pan scramble the italin sausage. Combine in a lareg sauce pan meats, tomato paste, onions, bell peppers, stewed tomatoes, picante sauce, garlic, gumbo file, green chili peppers, jalapeno peppers, creamed corn masa flour mix, cooked kidney beans, shelby's texas salt. season to your taste. simmer for two hours.
vegetables: using food processor grate onions, green peppers, chili peppers, garlic. or dice very finely . use a blender to pureee stewed tomatoes. Corn masa flour: Cream Shelby's corn mesa flour package in a small saucepan, add 16oz. of water, taco seasoning mix. soak beans overnight cook for five hours on low heat. after two hours of cooking add 2 slices of bacon, 2 teaspoons salt, 2 teaspoons black pepper, 1 teaspoon garlic powder. When beans are tender remove bacon, drain then add to chili. |
