3 cups flour
2 cups sugar
1 teaspoon soda
2 teaspoons cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
2 eggs, well beaten
1 cup corn oil
1/4 cup water
2 teaspoons vanilla
1 cup chopped nuts
3 cups chopped apples
Directions:
Directions:
Sift in large mixing bowl: flour, sugar, soda, cinnamon, nutmeg and salt. Make a nest in center of dry ingredients and add eggs, corn oil, water, vanilla; mix well (batter will be very stiff). Add nuts and apples and stir till mixed. Spoon into tube cake pan sprayed with Pam. Bake 1 hour and 15 minutes at 350º. Cool 15 minutes on rack, turn out on plate.

This was a favorite at my Grandmother Carrie Jane Puett's for the fall and for holidays; it's great with whipping cream or drizzled with caramel sauce.
