Ingredients:  
1 red bell pepper, cut into strips
1 green bell pepper cut, into strips
1 medium onion, sliced
3 garlic cloves, minced
3 T. vegetable oil, divided
1 lb. fresh bay or sea scallops, drained
3 T. lite soy sauce
1 tsp. orange zest
3 T. orange juice
1 T. dry white wine
1/4 tsp. dried crushed red pepper
2 T. butter
Cooked pasta or rice

Directions:
Directions:
1. Saute' first 4 ingredients in 2 T. hot oil in a large skillet over medium-high heat until tender. Remove from pan, and keep warm.
2. Saute' scallops in remaining 1 T. oil in skillet over medium heat 5 minutes or until done. Remove scallops from pan and keep warm.
3. Add 2 T. soy sauce, orange zest, and next 3 ingredients to skillet. Bring mixture to a boil, and cook over high heat about 2 minutes. Gradually whisk in butter and remaining 1 T. soy sauce until well blended. Stir in scallops and vegetable mixture. Serve over cooked rice or pasta.
