3 eggs
1 c. vegetable oil
1 1/2 c. sugar
2 c. zucchini-grated & drained
2 tsp. vanilla
1 c. walnuts-chopped (optional)
2 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
1 T. cinnamon
1 tsp. salt
1 c. raisins

Directions:
Directions:
Spray 2 medium (or 3 small) loaf pans with Pam.

Mix together eggs, oil, vanilla and sugar. Add dry ingredients. Mix until blended together. Fold in zucchini, raisins, and nuts.

Pour batter into pans.

Bake at 375º for 45-60 minutes (34-40 minutes for small loaves).
