9x13 or 8x11 glass pyrex dish
1 package of graham crackers
1 8 oz package of cool whip
2 packages of cream cheese or french vanilla pudding mix
1/3 cup of cocoa powder
1 cup of sugar
1 tsp of vanilla
1/4 cup of unsalted butter
1/8 tsp salt
3 and 1/4 cups of milk

line the dish with graham crackers.
in a large bowl mix the pudding mix with 3 cups of milk. As it thickens fold in the defrosted cool whip. Spread half of the pudding mix over the graham crackers. Cover with another layer of graham crackers. Spread the remaining pudding on top and finish with a final layer of graham crackers. Sometimes you have to break the crackers to fully cover the dish.
In a saucepan over med/high heat, mix the cocoa powder, sugar, salt, and 1/4 cup of milk until it boils, stirring constantly. Once it boils stir for one minute before taking off the heat. Immediately mix in the butter, salt and vanilla, stirring until it melts and thickens slightly. Poor over the graham crackers and cover and refrigerate, preferably overnight.

This is an absolute Powell family favorite. Not only do I have to make it for each of my kids' birthdays, I now have to make it for their friends on THEIR birthdays! Originally named "Chocolate Eclair Cake", it changed when Jack Powell had his first taste at around age 4. "Mom, do they call this "Chocolate Declare Cake" because everyone declares it is so good?". The name stuck...and we do declare that it is the best cake ever!
