2 medium zucchini, slice into 1/4 inch circles
2 jars of pizza sauce
3 c. of mozzarella or provolone cheese

OPTIONAL INGREDIENTS:
2 cloves of minced garlic
1 medium onion, finely chopped
1-1 1/2 lb. ground beef

Directions:
Directions:
Preheat oven to 350º. If using optional ingredients, brown beef, onion and garlic. Drain well. Layer the following into the pizza pan: pizza sauce, beef mixture, zucchini, and cheese.
Bake for 40-50 minutes until hot and bubbly.

This is a great way to use up excess zucchini in the summertime. It tastes good left-over and even kids will ask for seconds.
