5 cups flour
1 tsp baking powder
2 tsp salt
1 pound lard
1 egg
1 tbsp vinegar
cold water
Apples, sugar, cinnamon, flour

Mix flour, baking powder, salt and lard with pastry cutter, or with 2 knives. Mix until lard is in small pieces. beat egg in 1 cup measure. Add vinegar and add cold water to fill cup. Add to flour mixture and mix with hands. Knead until smooth.
roll and place in pie shell.
Sprinkle 1/8 cup flour and approx 1/2 cup sugar on bottom of crust. Add sliced apples - enough to form a mound in the crust. Sprinkle approx. 1/8 cup sugar on top and sprinkle with approx. 1 tsp of cinnamon. Put top on pie.
Bake at 400º for 10 minutes. Lower oven to 350º for 15-20 minutes and check.

if using pastry flour, you will need 1/2 - 1 cup more flour then all purpose flour. There is enough crust for 3 to 4 pies or extra pastry can be frozen.
