1 container Ricotta Cheese
1 pk. frozen chopped spinach or pk. of fresh chopped
1 jar finely chopped artichokes
1 c. mozzarella cheese
c. Parmesan or asiago cheese
Salt & pepper to taste
2 tsp. basil

Egg Roll Wrappers
Water or egg

Mix the filling ingredients well. Taste and add more seasonings it desired.

Dampen the edges of the wrapper with the water or egg mixture.

Take one large tsp of the cheese mixture and put it on the egg roll wrapper about inch from the top leaving enough room on the sides to fold them in. Fold in sides then take the top and fold it around the mixture. Roll to the end creating a log. You can freeze these at this time or you can deep fry them and freeze.
