8 large flour tortillas
1/2 cup sugar
1 tbsp cinnamon
2 tbsp honey
oil for frying
paper towels

Directions:
1. Cut the tortillas into quarters and set aside. Mix the sugar and cinnamon in a bowl or shaker. In the meantime, heat 1/2" of oil in a large, heavy saucepan over medium-high heat ( alternately, prepare a deep fryer for use)
2. When the oil is hot (it will crackle in response to a drop of water), place in the pan as many tortilla quarters as will comfortable fit. Fry until light golden brown. Then place on paper towels to drain. Sprinkle immediately with the sugar mixture and drizzle with honey. Continue cooking in this fashion until done and serve while warm.
