2 Tbsp butter
1 1/2 cups brown sugar
1 1/2 boiling water
Pinch of salt

Dumplings:

1 1/4 cups all purpose flour
1 1/2 tsp baking powder
1/2 cup granulated sugar
2 Tbsp butter
1/2 cup milk
1/2 tsp vanilla extract

Whipped Cream, if desired

Directions:
In a medium saucepan over medium heat, combine butter with brown sugar, boiling water, and salt. Cook stirring constantly until sugar dissolves and butter melts. Reduce heat to warm stirring occassionally, as dumplings are being prepared. Into a bowl, sift flour with baking powder and sugar. With a pastry blender or two knives, cut in butter until mixture resembles coarse crumbs. Add milk and vanilla; mix until just moistened. Drop dough by teaspoonfuls onto hot caramel sauce. Cover tightly and cook over medium-low heat 20 minutes. Do not remove cover during cooking. Spoon dumplings into desert dishes; ladle sauce over dumplings. Serve warm, with whipped cream or topping, if desired.
