3 tbsp. butter
2/3 cup long grain rice (white or brown)
1 13 oz. can chicken broth
2 tbsp. parsley
pepper to taste
1/2 tsp. salt
1/4-1/3 cup grated Parmesan cheese

Directions:
Directions:
Melt butter. Stir in rice until golden brown. Remove from heat. Add remaining ingredients. Put ingredients into casserole dish. Cover loosely with foil. Bake at 350º fro about 50 minutes. Stir rice mixture after 30 minutes to keep mixture well-blended.

I serve this with the beef tenderloin fillet and herb cherry tomatoes. A great meal!
