2 1/2 c. water
1/3 c. vegetable oil
4 oz. (1/2 small can) tomato sauce
2 tsp. salt
1 or 2 packs sazon seasoning
2 c. uncooked white rice
1 15.5-oz can pink beans, drained and rinsed
2 T. sofrito (optional-see index for recipe)

Directions:
Directions:
Combine water, oil, tomato sauce, salt and sazon in a large pot. Bring to a boil. Add rice and beans, stir and return to a boil. Cover tightly and reduce heat to medium low. Cook ten minutes, then uncover and stir in sofrito. Replace cover and cook ten minutes more. Rice will have an orange/yellow color.

Sazon seasoning is a seasoned salt containing Spanish and Caribbean herbs and spices. It can be found in the ethnic sections of many grocery stores. Look for Goya or Bohio brand sazon to be packaged in small boxes usually containing eight small packs.
