6 large eggs, separated
3/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar

Preheat oven to 425º. Sift flour, cornstarch and salt; set aside.

Line three baking sheets with parchment paper; set aside.

In electric mixer fitted with the whisk attachment, beat the egg yolks, 1/4 cup granulated sugar, and vanilla until light and creamy about 4 minutes; transfer to another bowl, set aside.

In the clean bowl of the electric mixer beat egg whites and 1/4 of granulated sugar on medium-high speed until foamy. Add the cream of tartar and continue to beat until soft peaks form. With the machine running, gradually add the remaining 1/4 cup of granulated sugar, beating until stiff glossy peaks form.

Fold the egg-yolk mixture into egg-white mixture and fold in dry ingredients. Don't over mix.

Transfer to a pastry bag fitted with a 1/2-inch round tip. Pipe 4-inch long cookies onto prepared baking sheets, spacing them 1-inch apart. Lightly dust with powdered sugar. Bake, rotating pans after 4 minutes, until just beginning to brown around the edges about 8 minutes. Transfer to wire racks until cool. Store in airtight container up to 2 weeks.
