8 sweet potatoes
3 T. melted butter
1 can crushed pineapple (drained)
1/4 c. coconut
1/4 c. fresh orange juice
2 T. cinnamon
1/2 package mini marshmallows
Directions:
Directions:
Butter a casserole dish. Microwave or boil sweet potatoes until tender. Peel & mash. Add remaining ingredients, except marshmallows. Bake at 350º until heated through. Just before serving, top with marshmallows. Put back in oven & bake till marshmallows are browned.
