Ingredients: 20 Jalapeņo peppers
10 slices of bacon
1 pack of cream cheese
2 cloves of garlic, minced or 1 tsp of garlic powder
2-3 or more tsp. of your favorite BBQ rub
Fresh ground peppers to taste

Directions: Warning! Use latex gloves if you don't want burning fingers.You can find them in the cleaning supply section at the store. Wash the peppers and split lengthwise. Rinse out the seeds. Scrape the membrane if you want them less hot. Sit the cream cheese out for about 2 hours to soften. I find it easier to make this in a kitchen aid mixer. Put the cream cheese in the mixer, add the garlic, rub, and pepper. Mix well and taste. Add more rub if you like. Fill the peppers with the filling. Cut the bacon slices in half and secure them on top the the peppers with toothpicks. Smoke or grill at about 200-250 for 20-30 minutes. Put the ATB's in a pan and put them under the broiler for a few minutes to crisp up the bacon. I'm not going to give you a time because you need to keep your eye on them the whole time under the broiler. |

Notes: You can use your favorite homemade or storebought rub with this. I prefer a rub heavy on chili powder, cumin and salt. You can add whatever you want. A little meat, diced jalapeņo or green onion. Maybe a little grated cheddar.These things go fast so you may want to double this recipe.
