Ingredients: 2-1/4 cups sifted flour
3/4 tsp baking powder
1/2 tsp. salt
1/2 cup chilled shortening
1- 1/3 cup shredded cheddar cheese
1/3 cup cold water
7 medium-size tart apples
2 Tbsp. lemon juice
1/2 cup granulated sugar
1/4 tsp. nutmeg
1 tsp. cinnamon
Crumb mixture:
1/2 cup lightly packed brown sugar
1 cup flour
1/2 cup chilled butter

Directions: |
Directions:Combine together into a bowl 2-1/4 cups flour, baking powder and salt. Cut in shortening. Add cheese and combine lightly. Sprinkle water a tablespoon at a time, mixing lightly with a fork until mixture clings together but not sticky. Wrap and chill before rolling. Preheat oven to 400º. Roll pastry to fit a 16 inch pizza pan or a cookie sheet. Turn up the 3/4 inch rim of pastry and flute. Core apples but do not peel. Slice into 1/2 inch wedges. Arrange apple wedges in a pinwheel design on the round pizza pan or rows on the cookie sheet. Sprinkle lemon juice over apples. Combine granulated sugar and spices: sprinkle over apples. Combine 1 cup flour and brown sugar. Cut in butter. Sprinkle crumb mixture over apples. Bake in oven for 25 minutes. Cut into wedges and serve warm. Makes 10 to 12 servings. |
