Salsa

1-2 jalapeños 1 tbsp salt
4 -5 onions 2 tbsp sugar
10 cloves garlic ½ cup apple cider vinegar
3 peppers - 1 big john 2 yellow peppers is what I use
4-5 tomatillo
8 cups skinned and blanched tomatoes (blanch 45 seconds)
½ bunch cilantro

Put the jalapeños, onions, garlic, peppers and tomatillos in food processor pulse until chopped but not runny add the tomatoes pulse until chopped add the remaining ingredients and pulse until mixed (don’t over mix).

This recipe will make approximately 1 gallon of salsa and will last up to 6 months in the frig. We make it and share among friends and coworkers.
