1 lb. hot sausage
3 cups Bisquick
1 & 1/2 cups of shredded cheddar cheese
1 can condensed cheese soup
3/4 cup water

Directions:
Directions:
Cook sausage in skillet, break into small pieces. Drain and cool. Spread sausage on cookie sheet, cover with paper towels and press to soak up grease. Combine sausage, biscuit mix, and cheese in large bowl. Stir soup and water. Pour into sausage mixture, stirring until ingredients are moistened. Spoon into lightly greased mini muffin pans. Bake at 375º 20-25 minutes or until lightly browned. Serve warm.

I use the Heart Smart Bisquick and sharp cheddar cheese (about 2 cups), you can't ever have too much cheese.
