3 medium zucchini (about 8 oz. each), 1 lb. ground beef, 1 small onion, diced, salad oil, 1/4 tsp. oregano leaves, 1/4 tsp. pepper, 1 - 15oz. can tomato sauce, 1 - 4oz. pkg. shredded mozzarella cheese, salt, 1/4 c. water, 1 tsp. sugar.

Cut zucchini lengthwise in half. Scoop out center, leaving a 1/4" thick shell. Dice scooped out zucchini. Set zucchini shells aside. In 12 " skillet over medium-high heat, cook ground beef, onion, and diced zucchini until meat is browned and onion and zucchili are tender, stirring occasionally and adding salad oil if necessary. Stir in oregano, pepper, half of tomato sauce, half of cheese, and 3/4 tsp. salt; remove skillet from heat. Into each zucchili shell, spoon some meat mixture; set aside. In same skillet, stir water, sugar, remaining tomato sauce, and 1/4 tsp. salt. Arrange stuffed zucchini in sauce in skillet; over high heat, heat to boiling. Reduce heat to low; cover and simmer until zucchini is fork-tender, about 10 minutes, stirring occasionally. Sprinkle remaining cheese over stuffed zucchini. Cover skillet and cook about 2 minutes longer or until cheese is melted.
