Cake:
2 cups flour
2 cups sugar
2 eggs, slightly beaten
1/2 tsp salt
2 tsp baking soda
2 1/2 cups crushed peaches(fresh or canned)



Topping for cake:
1 stick margarine
3/4 cup evaporated milk
1 cup chopped pecans
1 cup coconut
3/4 cup brown sugar
1 tsp vanilla

Preparation Time:15 minutes

Cake: Drain peaches, fresh or canned. Mix all cake ingredients well and pour in greased 9x13 pan. Bake at 350º for 30-35 min. Topping: In a 1 quart sauce pan, mix all ingredients and cook on medium heat until thick. Pour over cake while still warm.

This is a recipe that my Grandma Higgs would make year round. I remember it in the winter when she would use her home canned peaches from the previous summer. It was served warm with ice cream. The topping is a classic German Chocolate Cake topping.
