1 Baked 8" pie shell (pastry, or crumb)
1 1/3 cups (15 oz. can) Eagle Brand milk
1/2 cup lemon juice
grated rind of 1 lemon, or 1/4 t. lemon extract
2 eggs, separated
1/4 t. cream of tartar
4 T. sugar

Directions:
Directions:
Blend Eagle Brand milk, lemon juice, lemon rind or extract, and egg yolks. Pour into pie shell. Add cream of tartar to egg whites. Beat until almost stiff enough to hold peak. Add sugar gradually, beating until stiff, not dry.
Pile lightly on filling. Bake in a slow oven 325º 15 min or until lightly browned. Cool
