1-2 T oil

2 medium onions, finely chopped

1 clove garlic, finely chopped

1 chile, finely chopped

2-in square piece of ginger, finely chopped

1/4 t coriander powder

1 t cumin powder

1/4 t red chile powder

1/2 t cumin seeds

1 small tomato, chopped

1 c peas

2 c carrots, diced

salt

Directions:
Directions:
1. Heat oil and saute the onion over low heat until brown (20-25 min)

2. Add coriander, cumin, red chile powder and cumin seeds, and saute for 2 min. Add 2 T water and stir well. Continue 3 mins.

3. Add tomato and cook 2-3 mins. Add peas and carrots, salt to taste and cover and cook until tender.
