1-2 T. oil

1/2 t. mustard seeds

1 green chile, chopped

1/2-in square piece of fresh ginger

10 curry leaves

1/2 t. salt

lime juice (optional)

sprinkle of sugar

1. Soak cabbage 15 minutes.

2. Heat oil and add mustard seeds. When they pop , add the chile, ginger and curry leaves.

3. Add cabbage, salt and sugar. Cook over low medium..
