French Onion Soup Recipe

5 lbs onions
4 T butter
10 c beef broth
4 lbs grated Gruyere Cheese
4 C toasted bread cubes or 10 slices toasted French bread

Preheat oven to 400
Peel and slice the onions as thinly as possible. Melt the butter over medium heat in a wide, heavy pot large enough to hold the onions. Add the onions and stir occasionally over medium heat until the soften and release their liquid. About 15 minutes.
Turn the heat to high and reduce the liquid but be careful not to burn onions. When most of the liquid is gone, turn the heat to medium-low and stir until the onions caramelize.
When the onions look golden brown, add 1 cup of broth and turn the heat to high, scraping the bottom and sides of the pan. Add the remaining broth and season to taste.
Simmer the soup for 10 minutes. Ladle the hot soup into oven -proof bowls. Put a slice of toasted bread onto each bowl and top generously with cheese.
Put on a baking sheet and bake for until cheese bubbles and browns slightly. º
