2 unbaked pie shells
5 c milk
1 c sugar
1/2 c cornstarch
1 pkg (3-oz) banana cream pudding mix
2 large eggs, slightly beaten
dash of salt
1/2 t lemon extract
4 bananas, sliced
whipped cream
coconut chips

Directions:
Directions:
In heavy saucepan mix milk, sugar, cornstarch, pie filling, eggs & salt. Cook over med. heat until it comes to a full boil, stirring constantly with wooden spoon. Cook 1 min.
Stir in lemon extract; pour into a bowl to cool. Cover with waxed paper. Beat 3 times during cooling for 1 min. each time.
When completely cool, beat again for 1 min. Pour 1/2 c filling into each shell and spread evenly. Place sliced bananas on top & cover with remaining filling.
Top with sweetened whipped cream.
