1 pkg. (2 layer size)yellow cake mix without pudding
1 pkg. (4 serving size) Jello Vanilla instant pudding
1 1/3 c. water
4 eggs
1/4 c. oil
2 c. Angel Flake coconut
1 c. chopped pecans

Coconut Cream Cheese Frosting
2 tbsp. butter
2 c. coconut
1-8oz. pkg. cream cheese
2 tsp. milk
3 1/2 c. sifted powdered sugar
1/2 tsp. vanilla

Directions:
Directions:
Cake: Blend cake mix, pudding, water, eggs, and oil in large bowl at medium speed for 4 minutes. Stir in coconut and nuts. Pour into 3 greased 9" cake pans (or 9X13 pan). Bake at 350º for 35 minutes or until toothpick in middle comes out clean. Cool.
Frosting: Brown coconut in oven. Cream butter with cream cheese, adding milk and sugar alternately. Add vanilla. Stir in 1 3/4 c. coconut. Spread on tops and side of cake. Sprinkle with remaining coconut.
