Salsa Verde Recipe

2 green tomatoes
1 jalopeno pepper
1/4 onion
2 cloves garlic
1/3 c. cilantro
1/2 tsp cumin
pinch oregano
salt and pepper to taste
2 T. vegetable oil

Directions:
Directions:
Cut green tomatoes in half and remove the stem from the jalopeno and place them in a shallow covered pan. Add a little bit of water to the bottom of the pan (the water should only barely coat the bottom of the pan). Over a medium heat, cook them until the green tomato begins to darken (approx. 8-10 minutes). When complete, pour the green tomatoes and jalopeno into a blender and add the onion, garlic, cilantro, cumin, oregano, and salt and pepper. Blend well. In the same covered shallow pan, add oil and a couple slices of onion and cook until the onion becomes translucent then add the salsa to the oil and simmer for 8-10 minutes.
