Ingredients:
1 cup flour
1 cup corn meal...I get mine fresh ground up in El Salvador after I buy a sack of corn. It comes out of the mill in 4 grades. I use grade 2 med grind
1/4 cup sugar
3/4 tspn salt
1/4 cup shortening...or a little less then replace the amount with some bacon grease
2 eggs
1/2 cup condensed milk
1/2 cup water
4 tspn baking powder

Directions: Oven at 425

put the skillet or dish in and heat it up good while your mixing the stuff
add the dry ingredients (not the baking powder) and mix well
add the shortening and squeeze a fork thru it until it's all crumbly
mix the water and cond. milk, add the eggs...don’t beat, just break the yolks and swirl a little
add the baking powder
pull out the skillet or dish and grease it
pour the batter in the dish and bake 25 mins....turn off the oven and let it stay in the oven until your beans or chili-mac is ready to eat....hahahaha or whatever else your meal is.

Very easy, quick and yummy. We all think cast iron is the only way to bake corn bread......I can only wish such a thing existed here, oh well!!! Pyrex is here.
